We have been trying to eat a ton more vegetables these days! Yay for that, but veges can get so boring, right?!? Anyhow, we chopped up pretty much everything in the photo above with the exception of the carrots and eggplant. (We'll save those for another day.) Then we chopped up 1 chicken breast. Tossed it all in a casserole dish with the oven preheating @ 300 degrees. Added about 2 tblsp of EV Olive Oil. Then to our likings we added salt, pepper, herbes de province, and garlic powder. Mixed well and placed in the oven for 1 hour. Above is before placing in oven. So bright and colorful! (are you as ready for the colors of summer as I am?!?) I topped mine with a little cayenne pepper! Absolutely delicious!
