Indonesian Satay with Peanut Sauce

Picture
First you need to cut your chicken or beef into bite size pieces.  Then it needs to marinate for a few hours in sweet soy sauce (you will find this at an asian market).

And soak some skewers for a few hours. ( I only soaked mine for about 30 mins and some of them got burnt)

You'll need white steamed rice, I use my rice cooker.

We make an Indonesian dish Gadu Gadu with our Satay, because peanut sauce goes with it as well.  So boil some eggs.

Steam some green beans and carrots. We use frozen of both.

And peel and slice a cucumber or two.

Start grilling your chicken.

While the chicken is on the grill make the peanut sauce.

I do not go by a recipe for the peanut sauce, I just dump things in.  I use about a cup of crunchy and a cup of creamy. Add it to a saucepan.

Then I add about 5 tablespoons of chili sauce ( this is in the asian section of just about and grocery story). You can add more or less depending on how spicy you want it.  Squeeze the juice of one lime and add some sweet soy sauce.  I use around an 1/8 of a cup.  Then add water to the consistency you prefer you sauce (it should not be too much as you don't want it runny).

Heat on low, stirring, until warm and creamy.

Your chicken should be done now! Enjoy!

This is a crowd pleaser at our house! Hope you like it as well!
